Kashmir gears up for Gala Eid amid delicious dishes

SRINAGAR, June 15: With the Muslims in the valley gearing up to celebrate Eid-ul-fitr, the preparation of the festival is in full fervor as people are racing against time not only to do hectic shopping but also plan an extensive menu of delicious food which includes a variety of special recipes.
Though business establishments are doing brisk business with people going on a shopping spree but on the other side every home is set to get soon infused with the aromas of rich meat dishes and other recipes including bakeriesand other eatables.
Home makers are getting euphoric to make selection of the menu and assuring that every member of the family take part in the selection process so that the menu would include everyone's choice.
Fehmeeda Bashir, a homemaker says that her family had already planned the list of recipes that she will be cooking and also prepared a list of eatables that they have to purchase from the market and distributed the responsibility among the family members.
"Now that we are left with only few days for Eid, we don't want to buy things at the eleventh hour or on Eid day when the prices balloon. We are expecting lot of relatives and family friends so we have planned many special recipes which include Pakistani and Chinese. We will be cooking non-traditional Kashmiri food to add varieties," Fehmeeda says. "What we have fasted in the month, we will eat in the Eid days of celebrations," she jested.
Her menu for the Eid includes Chicken biryani, Chicken Manchurian, Hyderabadi biryani, sweet seviyyan (vermicelli), Chocolate fudges, pastries, pizza, Chicken nuggets, Gulab jamun, Ras malai, Jalebi, Barbeque and hot dogs.
"Though we have planned most of the food with high calorie and sugar but the occasion is special and we don't want to serve the routine traditional food which is eaten by most of the people routinely. We want some special delicacies so that people should remember the different varieties of tastes without getting tired form a single flavor," adds Fehmeeda's daughter.
The holy festival is celebrated with great enthusiasm and fervor everywhere in consonance with its sheer spirit and significance for the Muslims. Stalls and vendors selling mostly non-traditional eatables and eatables on wheels jostle with each other to get a prime spot in the market as they mostly cater to last-minute shoppers.
"We used to get busy in organizing a lavish spread of traditional eatables like yakhni, rogan josh and chicken used to be the special food and bakery used to be katlam, cakes, kulcha and other local eatables. But now, everything has changed, maximum number of foods are either readymade or semi made and just need a simple heating at home," says Hajra Begum.
She says that nowadays most of the eatables are fried foods as well as other dietary items making the festival complex. "There is a lack of traditional touch and culture in the festival as everything is non-local. The makers are outsiders but the people here are local. We elders are helpless as we have to accept this new trend otherwise we have to face adjustment problem," added the aged lady.
The preparation for the festivity is tinged with excitement and joy which is preceded by rush for Eid purchases. Scores of markets and shopping centres can be seen bustling with people buying essentials and other accessories to prepare for the religious festival. In various food markets, women are seen browsing through shops and the colourful makeshift stalls set up to add variety to their cuisine
