Early Times Report

Jammu/Jalandhar, Dec 23 : Lovely Professional University (LPU) commenced the Christmas festivities with a vibrant ‘Fruit Maceration Ceremony,’ organized by the School of Hotel Management & Tourism (SHMT). This event, held at LPU’s state-of-the-art facilities, showcased the culinary creativity and skills of SHMT students, focusing on the art and science behind fruit maceration.
The ceremony, attended by LPU’s Pro Chancellor Mrs. Rashmi Mittal, Pro Vice-Chancellor Prof Dr. Sanjay Modi, HoD Prof Shankar Jha, and other faculty members, aimed to celebrate the upcoming Christmas and New Year-2024.
Rashmi Mittal commended the students for their unique passion for the culinary arts and emphasized the importance of practical experiences in shaping future leaders for the hospitality industry.
Fruit maceration is a culinary technique that involves soaking fruits in a chosen liquid medium to enhance their flavors and create unique concoctions.
The ceremony symbolized the ‘Mixing’ ritual to welcome happiness and prosperity.
During the event, the chefs, executives, and celebrity guests participated in the mixing process—a significant step towards making the Christmas cake.
The ingredients for maceration included a variety of dry fruits such as raisins, prunes, dates, cherries, oranges, lemons, and nuts like cashews, pistachios, and almonds. Fresh juices, honey, and minced spices were added to create a mixture that was stored for further celebrations during Christmas and New Year-2024.
The celebration featured a Christmas-themed atmosphere with the lighting of the Christmas tree, carol singing, dances, and festive decorations.
The event brought together international and national students, fostering a sense of togetherness, creativity, and team-building spirit. LPU, known for providing 100% placement opportunities, prepares students in hotel management and tourism for placements in India and abroad, including cruise placements and international opportunities in the USA, Europe, Italy, the UK, and more.
