| Fortune offers wazwaan to food lovers | | | Early Times Report Jammu, Jan 21: Wazwan, a multi course meal in the Kashmiri tradition, is treated with great respect. Its preparation is treated as an art. The traditional number of courses for the wazwan is thirty six, comprising of a huge variety of non-vegetarian and vegetarian delicacies. The preparation is traditionally done by vasta waza (head chef) with the assistance of other chefs. A typical wazwan fare will begin with a ritual washing of hand in a portable basin called tashtnari which is attained by a server in the traditional white dress, which lends wazwan its true Kashmir flavour. A steaming cup of kahwa (Kashmiri tea) which is laden with spices, particularly saffron, and makes your senses more receptive to the gamut of flavours and aroma to be served later. While sipping kahwa ask for some crunchy bakirkhanni bread. A specially designed menu which will have signature delicacies from Kashmir like Tabak Maaz, Kokkar Kanti, Rista and Gushtabaq. Wazwan will not disappoint vegetarians. There is a ruwagan chaman, (cheese cooked in tomato) puree haakh-collard greens cooked in mild spices etc, beside phirnee too.
